This is my grandmother’s swiss chard pie that she gave me over the phone many years ago. I have made this chard pie many times and the truth is that it is super delicious and I have not found anything similar anywhere.

I have decided to share with you this “sacred” recipe from my grandmother Eugenia Diaz, so that you too can enjoy this very delicious pie and so that something so good does not get lost!

Ingredients

  • 3 bundles of swiss chard
  • 2 bundles of spinach
  • 1 medium onion finely chopped
  • 2 tbsp parmesan cheese grated
  • 1 tbsp oil
  • 1 clove garlic
  • 1 tbsp cumin
  • salt to taste

Pie Crust Ingredients

  • 250 grms of margarine or butter
  • 3 cups of flour
  • 1/2 cup cold milk
  • 2 tsp baking powder
  • 1 egg

Step by Step Instructions

Step 1

Grease and flour a rectangular metal model of approximately 30×22 cm

Step 2

Wash the chard and spinach bundles well. Bring water (two fingers high) to a boil in a large pot. Once boiled, reduce the heat to medium.

Step 3

Chop the chard (finely chopped) and spinach. Put the chard first (the stems first) in the water over medium heat and put the chopped spinach on top. Add salt. To take to a herbor. Remove the heat pot and let cool. Once cold, strain the spinach and chard, let it drain well.

Step 4

In a medium frying pan put the oil and over medium heat fry the chopped onion, season to taste with garlic, salt, cumin, pepper. Once the onion is translucent, remove from the heat and let it cool

Make the pie crust.⇓

While the dough is cooling, put the drained chard and spinach, the fried onion and 8 chopped soda crackers in a large bowl (this is grandma’s secret). Mix well. Taste to see if you need more salt.

Step 7

Remove the dough from the refrigerator and divide in two. One half a little larger than the other. With a rolling pin, knead the largest part of the dough the size of the pan (covering the bottom and all sides). Cover the bottom of the floured and greased pan with the dough. Pour the chard and spinach mix over the dough. With your fingers make 8 slits in the mix and in add an egg in each slit. Pour the Parmesan cheese on top of the eggs.

Step 8

Knead the other half of the dough and place it on top of the mix with the eggs. Close the edges of the dough with your fingers. Cut small holes in the top doughso that the steam can get out while it is cooking in the oven.

Step 9

Put in the oven for 45 minutes to an hour (depends on your oven). After 45 minutes, check if the dough is cooked. If it is, remove from the oven and let cool for 15 minutes.

If you want before putting the mold in the oven, you can mix an egg with a tablespoon of water and with a clean brush pass this mixture over the dough. This will brighten the dough during baking in the oven.

Step by Step Instructions Pie Crust

Step 1

In a large bowl, whisk together flour and margarine until mixture is grainy.

Step 2

Gradually add (by tablespoons) the cold milk, and finally the egg.

Step 3

Form the dough into a ball (you may need a little more flour if the egg is very large) wrap in plastic and chill in the refrigerator for 10 minutes.
