Orange Cake by Mamamama
I took this recipe from one of my grandma’s old cookbook, but made some changes based on my recollection of watching her make it at my parent’s house.

Her craftmanship in everthing she made was impeccable, I have beautiful memories of her in my parent’s house in Monterrico making this orange cake so fast, she did not need to look at the recipe book! Enjoy this tasteful recipe.

Ingredients
- 3 cups white flour (sifted)
- 2 tsp baking powder
- 1 1/2 cups sugar
- 1 cup of salted butter
- 1 cup orange juice
- 1/4 cup vegetable oil
- 4 eggs
- 2 tsp orange rind
- 100 ml pisco (or similar liquor) optional


Step by Step Instructions
Step 1
Sift the flour. Measure 3 cups of sifted flour. Add the baking powder and sift all together.
Step 2
Beat the butter until it is soft and it turns a bit ligther. Add the sugar and mix well.
Step 3
Incorporate the flour mix and the orange juice to the butter and sugar mix in three batches.
Step 4
Add the oil and the orange grind. Mix well. Add the liquor is desired.
Step 5
Pour into 9-inch bundt cake pan. The pan should have greased to keep cake from sticking to bottom and sides.
Step 6
Bake at 350 degrees F 55 minutes. Check to see if done by sticking in a toothpick, if it comes clean then it is done. Take out of the oven and let cool.
